Cauliflower, Green Bean, and Tomato Gratin

½ bag (16 ounces) frozen cauliflower florets

1 cup (¼ of 14-ounce bag) frozen cut Italian green beans, cut green beans, or sugar snap peas

1 cup cherry tomatoes, rinsed and stemmed

¼ cup dried whole wheat bread crumbs

2½ tablespoons (1½ ounces) grated Pecorino Romano cheese

½ tablespoon olive oil

1 small garlic clove, grated or crushed

1. PREHEAT the oven to 400°F. Coat a 13″ × 5″ × 9″ baking dish with cooking spray.

2. BRING 1 cup water to a boil in a large saucepan. Add the cauliflower and beans or peas, cover, and cook for 3 minutes, then drain. Distribute the cauliflower, beans or peas, and tomatoes evenly in the prepared dish.

3. COMBINE the bread crumbs, cheese, oil, and garlic in a small bowl. Stir with a fork until blended. Sprinkle the mixture evenly over the vegetables.

4. BAKE for 20 minutes, or until the crumbs are golden brown.
